Apple tart {Äppeltaart}

For the yeast dough
500 g flour, 3 eggs, 160 g butter, 40 g fresh yeast, 100 g sugar, 1 cup milk, 1 tsp. salt
Sift the flour into a bowl and make a well. Crush the yeast, mix with the milk and sugar in a small bowl, then pour into the well and mix with a little flour
2. add salt, melted butter and the eggs and knead all ingredients well
3. leave to rest in the fridge for seven to eight hours or overnight

For the topping
1 kg apples, 2 eggs, 125 ml cream, 2 tbsp sugar
1. mix two eggs with 125 ml cream and two tablespoons of sugar together
2. put the yeast dough into the tin, let it rise again, cover with apple slices like a brick
3. bake for ten minutes at 180°C in a preheated oven
4. spread the egg mixture on top and bake for a further 20 minutes
